These are soooo good – I have made them for a year or so. Confession – I live alone and sometimes these are my whole supper. Really easy and quick at the end of a long work day.

3 C cubed russets, added onion & garlic powders, and 1 C mini carrots halved & par-cooked in water in microwave for veg. Just 15 min at 400 in 8 qt fryer! Delish! Carrots got sweet. Thank you for the recipe 👍😊
