A lovely colourful salad, who could possibly say no to that?! Summer is all about light healthy dishes, and that’s the best one. I love the citrus flavour, gives a nice kick to the salad.

Salads have been my go-to lately. So easy to throw together and you can change up the ingredients easily so you don’t get bored. I LOVE southwest flavors and this Cilantro Citrus Vinaigrette sounds so awesome!
