It’ll definitely go in the weeknight rotation. Thanks so much!

Delicious. It did take some time to put together. In the future, I might saute the onions and potatoes the night before so I could put it together more quickly in the morning.

I liked the basil leaves in the frittata. I have never tried that in ones I’ve made in the past. I also like the recommendation of Balsamic Vinegar. Also yummy! I had to make one mod because I am sensitive to tomatoes. I subbed out the tomatoes with canned beet slices sprinkled with tamarind powder, which adds a little tartness to the beets. My mod was just okay. I am not sure if I would recommend that as a tasty alternative, but I thought it was fine.

Not a potato eater over here, but the rest of this recipe sounds amazing!
