Things thst also worked for me…

– three times the mushrooms… After searing the chicken, remove, throw in two pats of butter and saute mushrooms (incidentally deglasing) then return the chicken and continue with the next step

– cornflour instead of arrowroot. Same idea.

– spinach optional… Better with but works without

I had to change 2 things… 1. Didn’t have spinach and wasn’t going to store. Also, used breasts as thats what I had. But that sauce was fantastic! We had leftovers the next night and just as good if not better. Such a simple meal to make but it tastes and shows like you went thru a lot of trouble. Going to make again this weekend but use thighs. Thanks for the great recipe!

I didn’t have thighs so used breast. I cooked a little too long but with the sauce it didn’t matter. I will add 1 cup coconut milk and 1/2 water next time because I love the coconut milk flavor.

I planned to serve it over cauliflower rice but ran out of time so we served this recipe over chickpea pasta and it worked perfectly. I haven’t eaten chicken in many years and was looking for a recipe help me get over my uncertainty and this did the trick. I loved it! My husband didn’t want chicken so I served his plate without and mixed in a can of tuna and he kept saying how good the sauce was. Thank you!!!
