Gold star for you for this excellent idea! Simply scrumptious. I used the Costco pesto and Yukon Gold potatoes, and jumbo-sized juicy Brussels–it was bomb! Do want to add that it’s a good idea, if using store-bought pesto, to skip adding salt–the pesto has plenty. Delightful side dish that will be in constant rotation at our house!

Wonderful! Made it twice within days!

I had such great fresh Brussels sprouts, a jar of pesto, that needed to be used up etc. I also added sweet potatoes, onions, broccoli….. You can’t go wrong. Use up, whatever you have in your fridge. (Zucchini, beets, carrots)
you can even prep in the morning – just take out before ready to bake… Thank you!
