I didn’t have fresh basil or rosemary, but I used an Italian seasoning mix that is heavy on rosemary. I would use a bit less salt on the zucchini slices and potatoes, and I wouldn’t have been able to broil it on high for 5 minutes without torching it. I wonder if the zucchini might be crispier cooked on aluminum foil instead of parchment paper?

Chicken turned out dry and potatoes  underdone. Used full size chicken breasts marinated for an hour, and chopped potatoes into 3/4 inch small pieces, so it wasn’t an issue of size. The only part that turned out good was the zucchini. Would not make this recipe again without modifications, such as chicken thighs added later.

I had chicken strips so put them in with the rest of the ingredients after 10 minutes so they didn’t over cook.
