Such a simple recipe, but it’s one of my very favorites! We’ve only served it over cauliflower rice, but serving it over roasted potatoes sounds even better ( I LOVE potatoes!)

Made this with 2 cups broccoli, chopped, instead of the onion and it was delicious! Served over rice.
